Peanut Butter Dough

Lately I've been craving peanut butter for some reason. And no I am not pregnant. It's weird though. I don't know where I got this recipe from, but it was a long time ago. The first time I had it was in elementary school back in El Paso. I remember I even submitted the recipe to be published in the school's cookbook, but unfortunately, on the move to Virginia, it got lost along with some other cherished cookbooks that we had.

This is awesome because you can play with it, as well as eat it. I usually just eat it though. And it's sooo easy to make.

1 cup peanut butter (creamy preferred)
1 cup evaporated milk (kind of expensive, but lasts a long time, and you can also make milk with it)
1/4 cup honey

Mix all together with a spoon. I usually start off with a spoon and finish with my hands, because it's so much easier to knead it.

And you're done! I'll eat some and save some for later by putting in the fridge, but it's usually gone by the end of the day.

A small jar of peanut butter has about 2 cups of peanut butter in it, so obviously I'm out because within three days I used all of it already.

Vegetarianism

After eating a salad today for dinner I realised that I don't eat meat much. It's not that I don't like it, or I'm against the slaughtering of animals, I just want to be healthy. I can go about a week without eating any meat at all and not even notice.
First of all, I hate cows. They are smelly. Steak, gross. Burgers, gross. Ground beef, gross but I'll eat it. Roast beef, yummy. I guess I'm kind of a hypocrite, because I like roast beef (and those cantina steak tacos from Taco Bell), but I don't really care. I will eat what I like, I won't eat what I don't like, and I will speak of it all.
But that's nothing new, I have never liked steak or hamburgers. On hamburger day, my parents always made mac and cheese and hot dogs for us kids.
*Side note: I watched a show on how they made hot dogs. It was gross. Call me crazy, but I still eat them, they are yummy lol.
I would totally become vegetarian if I didn't like fish (any kind of seafood) so much. You could call me a pescitarian, but I also like chicken. That and pork are reasons I could never become a herbivore.
Yes I like pork. I like pork and I like ham. I don't eat much turkey, even at Thanksgiving. My grandma makes a bomb ham, so I'm usually eating that.
Back to cows. I don't like milk. I was forced to drink milk as a child, and I'm not saying that's a bad thing. Lots of people still like it, but for me, it's sooo gross. When I was around 6 or 7 years old, my daycare took a field trip to a dairy farm. Yeah, totally bad experience when we toured the cow milking building (whatever you call it). The stench was so horrible, I can still remember it. After that I continued to drink straight white milk until I discovered the wonderful world of chocolate syrup, and I never looked back. I also must be lactose intolerant, because dairy does some funky stuff in my tummy that probably shouldn't be discussed here due to the graphic nature of the subject..
I don't have much protein in my diet. I don't like peanut butter. I think it stems from working at Keva Juice, details being cleaning blenders and washing wet peanut butter down the drain. *Shudder* Sorry, gag. Not to ruin your experience or anything. Also, I don't like eggs. UNLESS they're in the form of hard boiled only. Which takes time, so I cook about half a dozen at a time. I don't sprinkle anything on them, just eat them plain. Yummy.
I don't have much of a sweet tooth. I get a slight tummy ache from half of a Krispy Kreme. Pathetic, right? To me it's a blessing. I have a decreased risk for Type 2 diabetes lol. Among other factors, but really, I'm not craving sugar or sweets all the time.
Caffiene. The 'big C'. I usually don't drink coffee unless it's from Starbucks, and even that's rare these days, since I'm all out of Starbucks money. Tea, I will drink. I love tea, and I have lots of it. One word: chocolate. Need I say more.
Bottom line: I don't think I could ever be vegetarian or vegan.

Spiked Salmon Salad Sandwich

This is just like a tuna salad, except with salmon. It's my own recipe, but I got the idea looking for something unique to make with avocados.

1 can of salmon (pink)
Mayo or Miracle Whip
Sweet Relish
Hard boiled egg whites
Dash of cayenne pepper
Toasted sandwich bread

1. Hard boil eggs -boil for 20 minutes.
2. Open can of salmon.
3. Dump can of salmon into bowl.
4. Give empty can to cat to lick clean -not required if you don't have a cat.
5. Add mayo to taste -I usually add enough, but not so much that it's not dry anymore.
6. Add sweet relish to taste.
7. Cut 1 or 2 hard boiled eggs in half and take out yolk.
8. Cut egg whites into cubes -I use a fork.
9. Mix all together.
10. Sprinkle cayenne pepper, stir, sprinkle more to taste.

You can start toasting your bread any time.
The only thing that I felt like it was missing was onions, but that's only because I really love onions.

H2O VS The Other Stuff

I know this isn't exactly a food blog, but it's how I've been feeling lately so I thought I'd share.

For the past 4 days, I have declared a strike against water, persay. Not because it's "boring" or "plain", but for an experiment. With the exception of early Saturday afternoon (I sat in the sun for an hour), I have only consumed tea, Propel, and Gatorade. (And a Keva Juice).
Things I experienced:
Bloating
Fatigue
Cramping -my period isn't due for another 2 weeks.
Scratchy throat
Dry mouth/cotton mouth
Charly horses in my calves
Just overall miserable

The reason I started drinking stuff like this in the first place is because I had a hangover both Saturday and Sunday (not regretting any of it, however), and I was told that drinking Propel and Gatorade would help since they have "electrolytes" in them, meaning they had "salt" or "sodium". Which basically means I was retaining water, thus was my reason for feeling extremely bloated. It was horrible, I felt like I was on my period PLUS having a gnarly hangover at the same time.

As for my hangovers, the electrolyte drinks hadn't worked as well as water had. Water flushes everything out instead of retaining it in.

And the only rearson I didn't drink water yesterday is because I forgot. I know, I know, it's a sad excuse. But I woke up late, didn't have a lunch, had a free Keva Juice, went to Sonic, then home. The first time I consumed water was this morning at 2am.

At least I'm doing better than Kevin. He jokingly blames being married for breaking his streak of not drinking soda. It's just the opposite for me, actually. I stopped drinking soda right before we met (about 3 years ago), and I haven't to this day (with the exception of an occasional root beer, and even THAT isn't often). To be honest, I LOVE the taste of Coca-Cola, but I tried to drink it a while ago, and I was sick to my stomach. I can't even handle Ginger Ale, which is ironic, because it's supposed to relieve stomach aches!

I'm so glad that he's finally realised he's been drinking too much soda, and has decided to cut down. But that's why we have the Gatorade. I think it's disgusting, and I have some bad memories with it (psychological issues-it's silly but I'll explain if you want).

Overall, now I'll just stick with water, and the occasional tea (hot or cold), and the even more infrequent Starbucks coffee/tea. It just makes me feel better physically, and mentally.

Baked Enchilada Casserole




1 can cream of chicken soup
1 can cream of mushroom soup
1 can milk -regular milk, use empty soup can once
1 chopped onion
1 lb hamburger meat
1 small can green chile
1 can enchilada sauce
8 oz shredded cheese
6-8 corn tortillas

1. Brown meat with onions, add soups, milk, chile, enchilada sauce.
2. Stir well.
3. Spread a small amount of this mixture in the bottom of a well greased 9x13x2 inch pan.
4. Top with torn tortillas.
5. Spread more mixture over torn tortillas.
6. Spread more mixture.
7. Sprinkle with cheese.
8. Bake approx. 20 minutes until cheese is melted in a 350 degree F oven.

Notes:
-In the place of enchilada sauce you can use salsa.
-In the place of beef you can use chicken, just cook the chicken first.
-It took longer than 20 minutes to bake them, I just added 5 minutes at a time until the middle was bubbling.

KILLER Brownies
















Makes one 9 x 13 inch pan

1 cup butter
2 cups sugar
4 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon salt
1 ounce melted UNsweetened chocolate

1. Mix all ingredients except chocolate.
2. Divide batter in half and add chocolate to one half.
3. Spread white batter in a 9 x 13 inch greased pan, then spread chocolate batter over white batter.
4. Bake at 350 degrees F for 25 min (approx.).
5. Cool and frost.

Frosting:
1 1/2 cups powdered sugar
2 TABLEspoons cream (I used 2% milk)
2 TABLEspoons soft butter
1 ounce melted UNsweetened chocolate
1 teaspoon vanilla
dash of salt

Notes:
Please read all instructions and my notes carefully before you begin. It's not a complicated recipe, but you do need to be careful.
-Add 1 cup of butter first so you can cream it together with the sugar. I did opposite and ended up having butter chunks that I had to work hard to cream together with everything else.
-The unsweetened chocolate I usually use is Hershey's and it's already melted. I haven't been able to find it lately, so this time I used a different kind that I had to melt. Be sure to follow the directions on the package.
-The white batter will be a bit difficult to spread if you choose to grease your pan. Just work at it for a while, and you'll get it.
-I baked for wayyy longer than 25 minutes, because it was a little jiggly. I added about 3 minutes at a time, and checked after every few minutes. You don't need to use the toothpick trick for this, but you may.
-Be sure to add the whole amount of powdered sugar for the frosting. It makes the frosting "fluffy". Don't make the frosting until the brownies are just about cooled.

-I personally don't like to use frosting, but I did this time for other people. You are supposed to frost only the chocolate part, but I felt it was too much frosting for one area, so I frosted the whole thing (refer to picture).

I Made a Main Course Meal!

I know, it's shocking, right? I mean the most I can do is brown ground beef!!

Well Kevin is always complaining that I don't make dinner for him when he gets home from work, and I'm always like "I don't know how to cook!" So I thought I'd start practicing.

So this was my first time ever making anything but browning ground beef. So I was extremely nervous. I've always seen Kevin cooking it, so I kinda knew what to do.

I don't have a picture, because the chicken didn't look very appetizing (it looked more like a naked mole rat with marinade)

Ingredients:
3-4 large frozen chicken breasts (depending on how many people you're serving)
Any marinade of your choice (I used Mexican Lime -or something like that. I also wanted to do Lousianna Red Pepper, but thought that might be a little too hot for little Taylor)

Defrost chicken breasts by placing them in a large ziploc bag, and submerging them into a sink-full of hot water.
As soon as they are defrosted, pour marinade of choice into bag, and toss into refrigerator, until ready to cook. The stuff I use is "30 minute marinade", but I leave it on for a few hours before cooking.
When ready to cook, place on broiling pan. Save the leftover marinade in the bag!!
I use a broiling pan, and put the oven on "broil"
That means it cooks from the top instead of the bottom, and the folks in Europe call it "grill", because that's basically what you're doing.
Put the broiling pan on the bottom shelf, and cook for 7-10 minutes.
Halfway through cooking, take them out and drizzle on leftover marinade.
Put them back in for remaining minutes. Then, take them out and flip them over. Drizzle the rest of the marinade on them.
Leave in for 7-10 minutes.
Internal temperature should be at 165 degrees F. My thermometer sucks, so I wait until it's 140 degrees F or more. The chicken should continue to cook once out of the over for a few minutes.

So that was my first time cooking chicken, and everyone loved it. It was a little dry because since I thought our thermometer actually worked, I put it in for a little longer. Just don't let it get brown or black around the edges.
